Description
The PAD from SystemB is a practical shaping tool designed to help food professionals produce cordon bleu quickly, consistently, and with a professional finish. The PAD gives stuffed escalopes their characteristic cordon bleu shape with a simple press, ensuring uniform size and presentation every time.
Ideal for butchers, delicatessens, caterers, and food processors, the PAD allows you to create cordon bleu using your own recipes and preferred ingredients.
Versatile & Customisable
With the PAD, you can prepare cordon bleu using a wide range of meats and fillings, including chicken, turkey, pork, beef, or minced meat. Fillings can include cheese, ham, charcuterie, or other ingredients to suit your offering. Breadcrumbs and coatings can also be customised to achieve different textures and flavour profiles.
Beyond cordon bleu, the PAD can also be used to shape:
-
Meat pockets made from minced meat
-
Filled preparations
-
Stuffed puff pastry products
This flexibility allows you to expand your product range while maintaining consistent shape and quality.
How to Use
-
Prepare the cutlet by flattening it evenly.
-
Place the filling (cheese, ham, or other ingredients) in the centre.
-
Close the cutlet like a paupiette and coat with breadcrumbs if required.
-
Place the preparation into the PAD, close the tool, and press firmly.
-
The product is shaped into a compact, uniform cordon bleu, ready for seasoning and cooking.
For best results, baking at 180 °C for approximately 20 minutes is recommended.
Compact & Practical
The PAD is compact, easy to store, and fits seamlessly into any professional kitchen. It is designed for speed, consistency, and ease of use, helping reduce manual handling while improving presentation.
